Rock n’ Roll Eggs … Jenny Lee Breakfast Nook

What are Rock n’ Roll Eggs? Where can you get them? Where did it all begin? Well let me start by explaining Rock n’ Roll Eggs … it is a breakfast dish that began for me over a half century ago. It’s a dish or bowl that has fried potatoes, onions, chopped up Jumbo mixed together in scrambled eggs … did I mention that it should be sprinkled with shredded cheddar cheese and served with toast or in my case … Jenny Lee Cinnamon Swirl Toast! Where can you get them? At my house if your a starving musician or at Jenny Lee’s Breakfast Nook at 1014 Brodhead Rd, Moon Township, 15108. Where did it all begin? Well I’m sure that many have done this concoction over the years adding some protein to scrambled eggs but this particular recipe began with me as a struggling musician over fifty years ago when family and or musicians where hungry and at my house. We always had Jumbo in the fridge, a bag of potatoes and an onion … and what is breakfast without eggs. Now I always used Jumbo but you can use just about any of your favorite protein like, chipped ham, kielbasa, bacon, left over steak, you get the picture. In my large cast iron skillet I started by adding onion and cut up potato’s (using a left over baked Potatoe is my favorite) and a little oil or as I originally used a scoop of the bacon grease that was always close to my stove stored in a coffee can. Then I add the chopped Jumbo, cut in little squares, and mix all together. In a small bowl or cup, I scramble up a few eggs … and them add the egg mixture to the skillet. Scoop some out on a plate and add some shredded cheddar cheese or back in the day, shredded government cheese. This went a long way and I could feed several people from one skillet. We are going to introduce my Rock n’ Roll Eggs tomorrow (Friday, July 15) at our Jenny Lee Breakfast Nook. I plan on being there around 9:00 AM to personally kick it off and answer any questions and of coarse tell some rock n’ roll stories. Breakfast has always been my favorite meal and I feel like home, in my kitchen, when I’m at Jenny Lee Breakfast Nook with my family and friends.
